It’s going to be HOT this weekend. H-O-T HOT!
I’m excited and actually looking forward to the stifling, sticky heat wave. It means lunches at my favorite little restaurant along the river, sipping on cool margaritas in pretty mason jars, lazy days on the beach with my big floppy hat and trusty bottle of SPF 100+, and let’s not forget sitting out on my pattio, sipping on my favorite summer cocktail while reading a well-worn book.
What is this favorite summer cocktail, you ask? It’s a lovely little drink that I experienced while in Mexico. This stunning cocktail tastes like the ocean breeze, light and sweet with a hint of nuttiness. I love garnishing it with a sprig of mint and serving it in martini glasses – it ups the sophistocation factor.
So grab your floppy hat, sundress and sparkly sandals, whip up this tropical cocktail and head to the pattio. It’s Friday, and you deserve a night off.
Coconut Dream Cocktail
15ml light rum
15ml blue curacao
30ml pineapple juice
15ml coconut cream
1 cup of ice
Place rum, pineapple juice, coconut cream and ice in blender. Blend until frothy. Pour blue curacao into bottom of martini glass and top with blended mixture. Garnish with a sprig of mint.
