Chicken enchiladas, spicy rice, beans, lettuce, salsa, guac, chips, roasted corn with a sprinkle of chipotle and lemonade.
Taco salad and fresh squeezed lemonade with a little orange juice in it.

I had a Fiesta for my April Birthday Celebration. My family is scattered all over the country; about half of us live on the east coast and the other in the great Southwest. As a result, birthday gifts will often arrive a few days befor, and continue for many days after said birthday,. Thus: Our birthdays are FIESTAs. Arriba!
I served the following at my Fiesta:
Tamale Pie (My own recipe)
Authentic Guacomole (My moms recipe)
Chili con Queso (my semi homemade recipe)
Salsa with Chips (Thank you Pace)
Biscochitos (Cookies traditionally made at Christmas time in Mexican homes and the OFFICIAL COOKIE BY LEGISLATION IN THE STATE OF NEW MEXICO).
I made napkins with a chili pepper cotton print and all was served with
Gingerale or Peach Margaritas (glasses rimmed with lime and dipped in Red Sugar). We used”wine glass charms with little Red Chili Peppers that I fashioned from Fimo™ clay. Add in a little wooden heart covered with black board paint and each guest’s name printed on it and both were hung on a hooking wire loop .. no doubt who’s margarita glass was who’s.
Tacos, Mexican Pizza, Chicken and cheese Enchiladas, Red Beans and rice, Midori Margaritas and shots of ice cold Patron with watermelon sherbet.

Sangria or any fruits in fresh cold drinks, including wine of course or Patron, yum yum
We serve strawberry margaritas, guacamole, hubby loves his sangria.

I am a member of Healthy Habit Fitness studio in Waynesboro, PA. We celebrated 4 years at the present location with a Cinco de Mayo party on May 3. We had mojitos with fresh mint, chips and salsa, and guacamole, mojito and key lime mini whoopie pies, meatballs, peanut butter pie, cheese and crackers, etc.
Then we danced it all off with a great Zumba session! Everyone also got flashing rings to add to the party atmosphere. In the past we’ve also had mojito cake. Yum!
