
Rejoice! The snow is melting and daffodils are beginning to creep out of the damp, dark earth. Trees are starting to bud, giving the branches a faint green hue, while Morning Doves coo, welcoming in warmer air and a gentle breeze. I’m happy to announce that Spring is on its way.
While nature is beginning to wake up from its long winter nap, our kitchens are also welcoming a seasonal change. Windows are opened letting in the sweet, fresh air. Tulips are placed in vases on counter tops and kitchen tables, giving life and a pop of color to our dreary, winter-worn kitchens. Even our menus are starting to shed their winter weight, ushering in bright, crisp flavors, leaving heavy winter comforts behind.
But despite lighter recipes making appearances in weeknight meals, our ovens and mixers continue to work overtime. Instead of earthy pumpkin bread and spicy molasses cookies, home cooks are turning to tangy lemon bars, sky-high coconut cakes and classic clover rolls just begging for a pad of butter.
Join me in celebrating the newness of the season with tender breads, beautiful cakes, and vibrant iced cookies. Let’s bring back the sunshine with a little Spring baking.

Anything with angel food cake or lemon.
I love making anything with lemon in it! Especially white cakes with lemon curd.

Strawberry short cakes! Sweet biscuit like individual flaky cakes with fresh strawberries in syrup soaking in and running down the sides, topped with fresh whipped cream, ummm!

ANYTHING lemon!! Lemon bars, lemonade cupcakes, lemon meringue cupcakes, and key lime pie for my daughter. And I just found a recipe for sticky lemon rolls with lemon cream cheese icing I can’t wait to try this weekend!
Not a dessert, but quiche says “spring” to me…maybe it’s the eggs. If we’re talking dessert, then some kind of lemon cake.

My very favorite thing to bake this time of year are lemon raspberry muffins. They are made using lemon yogurt and fresh raspberries.

Favorite thing is anything with strawberries or lemons. Cakes – pies – muffins. I bring stuff in for the guys in my department. That way I can bake but not eat it all myself.
It’s gotta be rhubarb pie. Yes, I know it’s old fashioned, but it just screams spring to me, way before the strawberries or blueberries. So, Grandma’s old fashioned rhubarb pie, no other fruits, no custard, just flour, sugar and rhubarb. Sigh. it’s spring.
I love to cook and have been reading cookbooks like others read novels for most of my life ( 60 + years) I look for new ideas daily and would love to have your cookbook. I appreciate everyone’s input and testing recipes so we have a tried and true evaluation of the finished product. I also enjoy knowing the history behind all those recipes. Happy Kitchen Memories !

Jello Pie! It sounds strange and does not taste like jello but yes, a box of jello is one of the ingredients. It is lime flavored and fluffy from whipped milk … and served frozen. Mmmmmm I loved this pie as a child and it is still my favorite.

I have been a cook and baker for 60 years and do not know what lemon curd is. I want to make the rolls so could you let me know. This sure makes me feel stupid.
