I love Thanksgiving, my entire family crowding around the table, napkins stuffed down the front of our shirts as we dive into turkey and pie. Even though there are 32 of us who come together for this feast, after the plates have been cleared we have enough leftovers to feed a small army.

I love the challenge that comes from Thanksgiving leftovers. Sure you could just recreate your dinner plate, but why not get creative with your culinary skills? There are so many delicious options when it comes to that last turkey breast, dollop of gravy, and few spoonfuls of stuffing.  Whether it’s the ultimate turkey sandwich, a gooey pot pie, or turkey casserole, the possibilities are endless.

While Thanksgiving may be 4 days away, I’m already planning out my leftover strategy: The Ultimate Thanksgiving Panini. This bold sandwich came to me after I tested some turkey day recipes a few weeks ago. With a few slices of hearty bread, I piled on turkey, mashed potatoes, and stuffing, then finished it off with a dollop of cranberry sauce. The sandwich was a monster but it was so worth it – an easy, tasty, hand-held Thanksgiving meal.

As Thanksgiving gets closer, what are some of your favorite ways to use up Thanksgiving leftovers?

Sarah’s Ultimate Thanksgiving Panini

Ingredients
2 thick slices of sourdough bread
2 Tbl cranberry chutney
3-4 pieces of roast turkey
1/2 cup of leftover stuffing
2 Tbl mashed potatoes
1 Tbl cold gravy

Directions
Butter the outside of the sourdough bread and place butter side down on a clean work surface. Spread the cold gravy and mashed potaotes on one slice of bread and the cranberry sauce or chutney on the other. Place the slices of turkey on top of the gravy, followed by the leftover stuffing. Season with salt and pepper. Toast sandwich on a panini maker or using a grill press until top is golden brown.
