
It’s November 1st and the feeling of pre-holiday stress is already here. There’s so much to do in so little time – menus to plan, pies to bake, and a turkey to wrangle – it’s enough to make one pull their hair out. With your to do list growing a mile-a-minute, it’s hard to remember to stop and breathe – which is why a little comfort food is always good to have on hand.
Oatmeal raisin cookies are my comfort food. They’re the type of cookie that I like to have stock piled just in case of emergencies – and Thanksgiving planning is indeed an emergency. The blend of rolled oats, brown sugar, and plump, sweet raisins are enough to soothe away the worries of menu planning and table seating. Their soft, chewy goodness and spicy aroma always make me practice self-restraint, as I could quickly devour the entire jar.
Sometimes I like to “spice” up my oatmeal cookies by adding a few crunchy walnuts, tangy dates, or a dollop of honey. Each adds a different variation to such a comforting treat.
