Light and fluffy, pancakes can take on any flavor and be topped with just about anything. Feeling fruity? Add some plump blueberries. Feeling decadent? Try some Tiramisu pancakes. Looking for a classic? Reach for the butter and your favorite maple syrup.
During the holiday season I like to play off of more festive flavors. Pumpkin, eggnog, and butter pecan are just a few that make their way to my plate. My most recent pancake endeavor has been with cranberries and oranges. Not only are the cakes stunning to look at, but they have an incredible sweet/tart flavor that’s absolute heaven.

Our JOY is Saturday morning breakfast, especially PANCAKES: apple, banana, raspberry, chocolate, peach, cinnamon, pumpkin… and I’m looking forward to trying the Corn Meal Pancakes!
