
Chili is a personal favorite during the cool fall months. After a day of apple picking, pumpkin picking, or even on a cozy night in, chili always makes a welcome appearance. Tender brisket, spicy andouille, and dried chilies, come together with beans and tomatoes in a large Dutch Oven. For hours it simmers away, filling my home with a spiciness that captures the season. Topped with a dollop of sour cream and generous sprinkling of cheese, rumbling tummies are silenced upon first bite.
Recently I’ve started adding pumpkin into my chili mix – giving this savory dish a subtle, earthy sweetness. One can of pumpkin has the ability to take an already outstanding chili recipe and transform it into something richer and more decadent. Two words I never thought I’d use when talking about chili. Now pumpkin is a must have ingredient whenever I’m putting together this favorite dish.
