The school cafeteria was always such an exciting place – lines of hungry students, waiting impatiently as they moved through the lunch line. Mrs. Walter, our kind and talented school cook, would ladle out homemade soups, scoop up thick, creamy mashed potatoes, and dish up piles of tangled noodles and sweet spaghetti sauce. Chef salads and mostaccioli were some of my favorite lunches while in grade school. The smell of the garlic bread sticks that accompanied the pasta were by far some the most coveted treats.

My school was lucky, our lunches weren’t wrapped in cellophane or swimming in an oily, congealed substance. Everything was fresh and made from scratch. Now a days schools are coming under fire for their pre-packaged meals and squares of mystery meat. Parents are turning to the lunch box as a way to give their kids delicious, home cooked lunches. Here are 5 easy lunches that are perfect for the lunch box.
