
As summer winds down there is still plenty of fresh, farm-grown produce to be used up. Baskets of plump tomatoes, long ears of sweet, yellow corn, and tender zucchini are all waiting to be transformed into delicious recipes.
Corn is one of my favorite ingredients to cook with during these last few weeks of summer. The tiny kernels giving off a subtle sweetness in just about any dish. Since the weather is getting colder, I love to add corn to rich and savory soups. They’re the perfect way to warm up on cooler evenings – while still indulging in the bold flavors of the summer season.
