Over the past couple of years bacon has undergone a major transformation. It’s gone from a breakfast food staple to a high-end gourmet ingredient. Now you can find bacon in cupcakes, ice cream sundaes, even brownies. But one of my favorite ways to enjoy salty, chewy bacon is at the State Fair. Threaded on a stick and dipped into a vat of thick, creamy chocolate, chocolate-covered bacon is a sweet and salty delight.
Some State Fair vendors like to sprinkle their chocolate-coated bacon with salt, others with chopped nuts or a sprinkling of cayenne pepper. But I like mine plain – nothing to impede the traditional combination bitter dark chocolate and smoky, thick-cut bacon.
