Recipe: Chilled Homemade Soups

It is hot. I mean really hot. Air conditioners are working overtime, blasting cool air into homes and apartments, popsicles and buckets of ice cream are flying off the shelves, and the streets sizzle and melt into the horizon. Hello, summer.

When it’s this hot outside no one wants to turn on the oven or stove – even crockpots and toaster ovens are shunned. While I’ve shared ideas on keeping the kitchen cool, the stifling heat eats up all of your energy, making the idea of cooking an unwelcome one. Instead of letting your diet consist of Bomb Pops and ice cream sandwiches, a cold soup is the perfect way to beat the heat.

Made with garden fresh ingredients and seasonal spices, chilled soups are a healthy and easy alternative for lunch or dinner. Here are a three of my favorite chilled soups for these blistering summer days.
