
Pies are so hot right now. They’re everywhere. In bakeries, on the blogs, in the news – it’s all about pies, pies, pies. And these flaky delights aren’t your typical pie, either. They’re showing up on sticks. They’re showing up bite-size. They’re even making an appearance in jars. Pies are the new cupcake – and they’re oh, so good.
The 4th of July is just a few weeks away, and what better way to celebrate America’s independence than with good ‘ole pie. As our country’s unofficial dessert, pie can easily be tailored to fit the theme of red, white, and blue.
I remember the day the Test Kitchens tested these little morsels. The whole Taste of Home office filled with the scents of butter, sugar, and sweet berries. It smelled like grandma’s house. It took all of my will-power not to walk down and ask for a taste. Later in the day I noticed a throng of people rushing to the break area. Curious, I followed the masses, only to find a tray of these tender, juicy mini-pies. Hands surged forward, snatching up the delicate little tarts. Slowly, but surely, I made my way toward the front of the line, fearful that all the tarts would be gone.
When I finally made it to the pies, there was only one left. Wanting to fully enjoy the bite-sized treat, I took my pie back to my desk. With each bite I savored the sugary berries, the buttery crust, and the satisfied feeling that I was eating a little piece of summer. As I licked the remaining crumbs from my fingers I smiled. Smiled, because there really isn’t anything better than a truly, good piece of pie.
