Peach Wine Cooler

Happy Friday! This week summer officially arrived, bringing with it rain, rain, and more rain. I’m hoping the seasons will get their act together and bring some warm sunshine in time for the farmer’s markets tomorrow.  No one likes shopping for fresh produce in the rain.

Whether you’re suffering from sun withdrawal like me, or enjoying the sun’s rays, this peach wine cooler is sure to instill that easy, calm feeling that is summer. Pair this recipe up with a savory Almond Cheese Spread and some whole wheat crackers.

Peach Wine Cooler

2 cups white peaches
1/2 cup brandy
1/3 cup honey
1/2 lemon, very thinly sliced
1 bottle dry white wine
1-1/2 cups carbonated water, chilled
Ice cubes

In a 2-qt pitcher, combine the peach slices, brandy, honey and lemon slices; stir in wine. Refrigerate for 2-4 hours or until chilled.
Just before serving, stir in sparkling water. Serve over ice.

Yield: 9 servings.
