Lately I’ve talked a lot about spring and fresh veggies – the opportunity to finally change the momentum in the kitchen from heavier meals to lighter, cleaner flavors. Well, spring isn’t just about asparagus and leafy greens. It’s also about baking.

There are times when baking – and we’re not talking your everyday brownies and boxed cakes – can seem like a winter activity. You’re stuck inside, hiding from the bitter cold, and you take out your cabin fever on kneading a loaf of dough. The breads are heartier, and filled with rich, savory flavors.

But spring is also a beautiful time for baking – opening the kitchen windows and letting the sun stream through while you shape tender rolls and drizzle icing over warm bread.
