I love putting together big pots of soup. It’s a great way to use up leftover ingredients and keep away the biting winter chill. But depending on the soup, I sometimes find myself wanting just a little something extra – a side salad or sandwich, perhaps.

A toasty grilled cheese is always a good standby when you’re looking for a side. If you’re looking for something a little lighter then it’s best to go with some crisp greens.

Here are a few favorites that I like to enjoy when dipping into a hot bowl of soup.
