
I have never been able to successfully make gravy. It’s either too thick, too salty, or too bland, and with Thanksgiving just a couple of days away, I don’t want to risk making a bad batch of gravy.
Thank goodness for my friends in the Test Kitchen. They’ve shared with me some helpful tips for making the perfect Thanksgiving gravy.

Step 1: After pouring drippings in a measuring cup or fat separator, skim the fat, reserving 2 tablespoons. Add enough broth to drippings to measure 2 cups.

Step 2: Combine flour and reserved fat in a saucepan until smooth over medium heat.

Step 3: Gradually stir in the drippings mixture. Bring to a boil and stir until thickened. Add seasonings to taste.

How much flour?
It’s generally about a 1/4 cup. You can increase it gradually if you want a thicker gravy.
