Make-Ahead Mini Lunches

I’ve often found myself wishing that I could make a batch of something delicious at the beginning of the week and then have it for lunch all week long.  But, this presents the problem of lunchtime boredom. So, what about making a bunch of mini things instead?

Make-ahead minis, as I like to call them, present two solutions for lunchtime eating. One, anything mini is fun to eat. And, two, you can give yourself quite a bit of variety with just a few ingredients. All of this preventing the dreaded “Lunchtime Rut.”

So, want to take a look at some of the delicious minis I’ve pulled together? They’re the perfect size for any lunch box, and they can be frozen for future lunches.

These mini meals are adorable. I definitely agree that tiny things are very fun. I’m excited about trying some of these.

Just sent these to my daughter. She has to be out the door before 13 and 12 year old catch the bus. These will come in handy for those quick breakfasts.

Just made the Ham & Cheese Frittatas-they are fantastic and just the right size for everyone in the family. Quick breakfast. Does anyone know if these freeze well?

They do freeze well! Just re-heat them in the oven.
