Healthy, Hearty Main Dish Salads

Lunches can be so versatile. You can enjoy a nice wrap one day then go for a big bowl of soup the next. It’s fun putting some variety in a rather routine day. And let’s face it; we all need a little variety.

This morning as I was packing my lunch, I had absolutely no idea what to make. I was a little worn out on the turkey sandwich front, and I didn’t have any soup in the freezer. After rummaging around in the crisper, I settled on a hearty main daish salad. I grabbed a large Tupperware container and began to toss in some leafy greens, a slightly over ripe tomato, carrots, a hardboiled egg, some sliced turkey, and feta cheese. Yes, it’s a hodge-podge of ingredients, but it looks tasty. I poured some of my favorite salad dressing into a small container, grabbed a peach and ran out the door.

At work, I thought about all of the possibilities one could have when it came to a main dish salad. Leftover steak and avocado, tortellini with tomatoes and olives – the list goes on and on. So, I did a little recipe search and found some delicious options for lunchtime salads. And guess what? They’re all less than 400 calories. Perfect, huh?
