Fall can be so incredibly busy. I’m not exactly sure why, but I think it has to do with the build up to the holiday season. Everyone is bustling about getting ready for Halloween, Thanksgiving and then the mother of all holidays, Christmas!
We also can’t forget the football games, homecoming, play dates and other Back to School events. There are also the occasional fall getaway and weekend family outings to the apple orchards. Yep, fall is a busy time. But, even though people are rushing about, we still need to stop and enjoy a cozy meal.
I’m always looking for delicious, quick dinner recipes that I can whip up in a flash. Even through I’m running from work to volunteer events and then to meet up with my girlfriends, I want to be able to enjoy those classic fall flavors.

So, I rely on recipes like Cinnamon-Apple Pork Chops. In less than 30 minutes, I can bite into a juicy pork chop with sweet apples and spicy cinnamon. It doesn’t hurt that this is a one-pan meal, either.

If I’m in the mood for something a little richer, I reach for this Pumpkin Sloppy Joes recipe. It was an old standby in my Mom’s kitchen, and it’s become a popular favorite in mine. I like to make a big batch of these sloppy joes to have on hand throughout the week. Although, I have to hide it from my boyfriend – he tends to eat it all in one sitting!

Finally, there’s Hearty Minestrone Soup. Made in a slow cooker, I can set up this recipe in the morning before I leave for work and forget about it. I love walking into my apartment after a long day, and smelling this heartwarming soup – all I need to get is a loaf of crusty bread and a glass of wine.
