So, guess what. I’m still thinking about picnics. The weather is just so nice, and it’s a shame for all of us to be cooped up inside! Maybe I’ll have my own little picnic over lunch.

Anyway, I thought we could talk today about delicious picnic sandwiches.  I know yesterday I went on and on about how picnics should be more than just deli sandwiches.  Well, these sandwiches are picnic perfect and great crowd-pleasers.

Bacon-Provolone Chicken Sandwiches

Delicious and hot off the grill. I’d say this Bacon-Provolone Chicken sandwich is a picnic must. The bacon and provolone take this sandwich over the top. Add a dollop of Dijon mustard, or Chipotle mayo, to help spice things up.

Flank Steak Sandwiches

Everyone loves steak. If you don’t, well then I don’t know if I can trust you. These hearty Flank Steak sandwiches go great with summer and are piled high with fresh peppers and onions. I like to add a slice of provolone or pepper jack cheese for extra flavor.

Portobello Burgers with Pear-Walnut Mayonnaise

Alright. I’ve decided to save the best for last. Portobello Burgers with Pear-Walnut Mayonnaise. Yep, you heard me. A big, juicy grilled mushroom with a nutty pear mayonnaise and creamy blue cheese makes for one outstanding veggie burger.

Seriously, we’re going to have to go on a picnic. With all of those classic side dishes, and these perfect sandwiches, we’ve the the makings for one sensational outing.
