I really wish the weekend wasn’t over.
I spent my weekend at a lake house in Michigan with some friends. We swam, ate some BBQ, and drank some outstanding Sangria. We also ate a delicious Mint Chocolate Chip Brownie Ice Cream cake. It was inspired by Joy the Baker and sinfully good.
I took a sheet of fudge brownies and covered then with a thin layer of fudge and crushed oreos, then topped it all with mint chocolate chip ice cream. Yum.
But now, back home, I wish it was still the weekend so I can make this heavenly concoction. It’s another brownie cake, only it’s topped with warm summer berries. I’m told the hot berry topping seeps though the brownie layer into the cool vanilla ice cream. I get all excited just thinking about it!!
Sigh. I think we’re all going to have to wish this week by quickly. Then, come Saturday, let’s host a big BBQ and serve this decadent dessert. Who’s with me?
