
I”m going to be honest. I’m really not that big a fan of cold soups. Just the idea of it makes me squirm. For me, soups should be pipping hot and served on a blustery winter day. Mmm…now that sounds good.
But, my fellow friends, I think I’ve met my cold-soup match. Over the weekend I was at an outdoor dinner party. My friend did quite a lovely job with everything – twinkling party lights, ice buckets, white wine, canapes and this delicious chevre-stuffed chicken with apricot glaze. But, for me, the most memorable was her spicy gazpacho.
I was helping my friend in the kitchen, ladle the soup into bowls, when she held out a spoonful. “Try it,” she said. I took the spoon and took a cautious sip. HOLY WOW! It was an explosion of deliciousness – is that a proper culinary term? The tomato and red pepper blended together beautifully, while the heat from the green chilis and chili powder was cooled by the crunchy cucumber. Basically, it was amazing. I ended up eating two whole bowlfuls and asked my friend if I could take the leftovers home at the end of the party.
Of course, once I got home I had to recreate the soup – but just my luck, I forgot to ask for the recipe. Enter in Taste of Home – man, I love working for this magazine! I browsed through a few recipes until I found this fairly simple recipe. It’s the fresh veggies that help make this recipe outstanding. Add a splash of spicy V8 and you’ve got yourself one tasty gazpacho!

Will this taste as good as the one you sampled? You made it sound so good, I want to make it soon, especially in this weather…
Should I follow the directions except substitute the spicy V-8 for the tomato juice & it will as good as the one you described?
