I have a favorite towel I like to use when I go to the beach. It’s big, soft, and brightly colored. I like to spread out on it and read my chick-lit.
There’s a certain spot that I like to spread my favorite towel when I go to the beach. It’s not too close to the water, but not too far away either. It gets ample sun exposure, but has firm enough sand for a big, stripped umbrella.
I even have a certain type of food that I like to make when I’m spending the day at the beach. It’s full of fresh, in season flavors, ice cold, and transports well in a cooler, along with my diet coke. It’s my scrumdillyumptious pineapple mango salsa.
Have you ever tried mango salsa? It’ outstanding. The mango, soft and sweet, compliments the tangy pineapple and crunchy red peppers. Juicy tomatoes are added, then everything is drizzled with lemon and lime juice. I like to scoop mine up with some blue corn chips.
Grab your favorite beach towel, paperback book, chips and scoop into some of this delicious pineapple mango salsa.
