Grilled Summer Fish

Let’s talk fish, shall we? There are so many ways to enjoy it, fried, roasted, even raw.  But one of my favorite ways to enjoy fresh, mouthwatering fish is on the grill. I honestly believe that the grill has some magic power that makes the fish flakier, juicier, and just all around better. Top it off with homemade salsa and you’ve got one sensational summer meal.

While I could go on and on about my love for grilled fish, I think I’ll just get right to the recipes.

These three grilled fish recipes are by far my absolute favorite.

The first is Grilled Salmon with Black Bean Salsa. The salmon is so tender and flaky, and the grapes add a fresh, juicy crunch to the salsa. My sister, who isn’t a big salmon lover, couldn’t get enough of this easy recipe.

The second, is this outstanding Mahi Mahi with Nectarine Salsa.  I never thought a simple nectarine could be transformed into such a flavorful salsa. Add it to hearty Mahi Mahi fillets and POW! You’ve got summer on a plate.

Finally, and probably my ultimate favorite, Grilled Tilapia with Pineapple Salsa. Your mouth starts to water just looking at it. The refreshing, slightly spicy salsa is a delightful complement to the fish, and when served on a hot summer night with a chilled glass of white wine you’ll be transported to the tropics.
