Breakfast with Dad

While the majority of my cooking knowledge came from my mother, it was my Dad who taught me how to make breakfast. He taught me how to cook the perfect strips of bacon – not too crispy with a little chew. He taught me how to flip a pancake without it flying all over the kitchen.  He even taught me how to cook his famous One-Eyed Sandwiches – a weekend breakfast staple.

With Father’s Day only 3 days away, I’ve decided to cook my Dad a breakfast feast. And I mean feast! No turkey bacon or egg-beaters here. I’m talking all out, gut busting, show-your-Dad-how-much-you-love-him feast.

I’ll start the meal off with this delicious Blueberry Yogurt Muffins recipe. It’s the addition of vanilla yogurt that turns a basic muffin mix in these moist and tender muffins.

Then we’ll have some Spiced Bacon Twists. A sweet and savory rub takes regular bacon to a whole other level.

For the main event, Hearty Breakfast Combo. A fried egg served over potatoes, sausage, bacon, peppers and onions. It’s the perfect dish for anyone who wants a taste of everything.

I’m pretty sure this menu will put any dad into a food coma. Good thing there’s a hammock outback to help him recover!
